Keto Meal: Beef Meatballs with Heirloom Beef Tomatoes
I don't know what the shit I was doing when I bought these Heirloom Beef tomatoes. They looked good and I gots to get it, that’s all I knew!
Heirloom beef tomatoes are fleshier with lesser water content compared to normal tomatoes. To keep the integrity of the taste, I read that it’s much better not to refrigerate it.
I created this keto recipe on the fly and I loved how easy and delicious it turned out. So here goes:
Keto Beef Meatballs wit Heirloom Beef Tomatoes
(For 2 pax)
Render 1-2 pieces of anchovies in the frying pan.
Look how fleshy these heirloom beef tomatoes are.
Let them simmer in high heat.
I ran out of sugar, so I grabbed my trusty bottle lf Life ketchup for sweetness and to intensify the tomato taste.
And of course, my favourite chilli flakes which I sprinkled generously. Let it Burnnnnn 🔥
As though that wasn’t enough, I added my favourite Habanero tabasco sauce. This tabasco has the perfect balance of sweet, tangy, fruity and heat which will add complexity to the dish’s taste profile.
Additionally, intensify the flavour with garlic and piri piri powders.
Now add meatballs and simmer for 15-20 mins in low to medium heat, rotating them every now and then.
Finally, add hand-crushed feta cheese and salad leaves to soak up all the goodness.

Cooking time: 30 mins
8 Beef meatballs (marinate in salt, white pepper and a few tiny sprinkles of fennel seeds)
2 large heirloom beef tomatoes
A cup of crushed feta cheese
3-4 tbsp Life tomato sauce
2 tsp garlic powder
A few dashes of piri piri powder (optional)
A few dashes of Habanero Tabasco sauce
1-2 tbsp chilli flakes (optional)
Salt to taste
