Golden Seashell Pasta in Creamy Coconut Milk
Every one I know loves the beach. The sound of the rushing waves, the warm sunset, the beautiful reddish golden tan on your skin, the cool shade under coconut trees. I like it too.. from afar 🤳🏻, best explored in the comfort of cool air with audio visual experiences.
I picked up seashell pasta yesterday and was inspired to make an unconventional creamy pasta. So I gathered ingredients that remind me of th beach and set off to work.

I just redeemed a new hand blender and very excited to try it.
Blend onion, shallots, bird eye chillies and turmeric. (I didn't add ginger or garlic here because I have ready stock of the paste.)

Clean prawns and make stock from their shells. In a separate bowl, marinate prawns in a little bit of soy sauce, ground pepper, paprika, turmeric and onion powder.
Now add a 3 tbsp of oil and flash fry the prawns to brown it. Quickly remove them within seconds.

In hot oil, fry lemongrass until fragrant. It would probably be around 2 minutes before moving on to other aromatics.

Add blended aromatics.

Now add ginger garlic paste, let it continue to fry in high heat.

When the paste dries up, add prawn stock to dilute it and continue to do this for 15 minutes.

Add chilli paste.

Add a little bit of soy sauce and fish sauce. I think adding a little bit of sugar and sea salt here would be good too.

Now add a bowl of coconut milk.

Looks like clams swimming in the golden sun.

When the clams start to open, add prawns and off the fire.

Add prawns, clams and gravy into seashell pasta. Garnish with beautiful green vege and chives.
So here it is, my tropical pasta which really is an offshoot of Udang Masak Lemak Cili Api (prawns in coconut cream and bird eye chillies).

Aromatics (blended)
Onion - 1
Shallots - 4-5
Turmeric - 2
Bird eye chillies - 4 (I used 7 but that's because I'm insane)
Lemongrass - 3 stalks, bruised or slit lengthwise
Ginger garlic paste - 2 tsp
Chilli paste - 2 tsp
Soy sauce - 1 tsp
Fish sauce - 1/2 tsp
Coconut milk - 1 bowl
Sugar - 1 tsp
Sea salt - 2 pinches
Clams - 250 gm
Prawns - 4-5
