Delicious and Easy Chicken Stock Recipe
A friend once remarked that chicken feet look like tiny baby hands. Ok never mind that, let's expunge that image out of your imagination. Chicken feet will give your broth an amazing richness in texture and flavour.
Making chicken broth is easy and very handy to have around when you need to whip something up. Here's my recipe for an aromatic chicken broth that you can use to make Curry Mee, Clear Noodles (Qing Tong) or any kind of stir fry that requires gravy.
Firstly, make sure your chicken feet had their pedicure done. Believe it or not, I've been scratched by their vicious nails many times, so please do not repeat my mistake.
Add 2 tbsp of oil and brown the chicken feet. You can instantly smell how aromatic it is and this is a sign that your stock will be amazing. Believe 👊🏻
Then add lemongrass and garlic cloves. Continue to fry it in moderate to high heat.
Add water to deglaze the pot.
Add chicken carcass and a big bunch of scallions. Fill the 6-litre pot to about 3/4 full. Then close the lid and let it simmer over 90 minutes.
