Rosemary Chicken and Mixed Leafy Greens

Roast Chicken ingredients:
Chicken Breasts - 2
Onion Powder - 2 tsp
Garlic Powder - 1 tsp
Cayenne Powder - 1 tsp
Rosemary - 3 sprigs (chop leaves, discard twigs)
Garlic - 2 cloves (chopped finely)
Mustard - 1 tsp
Capers - 1 tsp
Leafy Greens ingredients:
Broccolini - 1 large bunch
Baby Spinach - 1 box
Garlic - 5 whole cloves (bruised)
Scallions - 1 bunch (chopped)
Roast Chicken Steps:
Brine chicken breast over 3 hours
Remove chicken and rub onion, garlic and cayenne powders, salt and mustard onto chicken
Add oil into pan then fry garlic and rosemary leaves until they become fragrant in medium heat, careful not to burn them
Brown chicken breasts in pan then quickly transfer into oven to cook for 23-25min. Add capers on top before closing the oven
Leafy Green Steps:
Fry garlic and scallions in medium heat
Add a little sea salt and taste
Add blanched broccolini (should be 80% cooked) and fresh baby spinach
Just as the baby spinach begins to fully wilt, remove from pan
