My Wok Is My New Bae

I love my new wok. It has taken five years of steely restraint. Of looking and walking away, resisting the seductive call of the shiny and new.

Maybe I've been hiding under a rock, but I've never heard of megastone pans before.

Vegetarian Noodles

Since my curry leaf plant has been sprouting away gleefully, I've decided to give it a little trim and create a dish inspired by it.

This is my Meatless Monday dish, for 2 pax.

Curry Leaf Angel Hair Pasta

Ingredients:

  • Angel Hair Pasta - 1 small clutch

  • Carrot, cut into matchsticks - 1

  • Mustard Seeds - 3 tsp

  • Dhal - 2tbsp

  • Green Chillies - 2

  • Curry Leaves - 4-5 sprigs

  • Diced Garlic - 4

  • Turmeric Powder - 1/2 tsp

  • Onion Powder - 2 tsp

  • Paprika - 2 tsp

  • Baby Spinach Leaves - to garnish

  • Asafoetida - 1/6 tsp

Steps:

  1. Cook pasta to 95% done, set aside

  2. Heat wok and add oil. Add mustard seeds, as it sputters, add dhal, curry leaves, green chillies and garlic

  3. After 3 mins, add turmeric, onion and paprika powders

  4. Add asafoetida

  5. Throw in pre-fried carrots, stir and turn off fire

  6. Garnish with baby spinach leaves
