Emergency Fire Noodles
Ain't no shame stumbling into hawker stalls at wee hours in the morning looking for some food to soothe a raging appetite (because They Is Expecting You).
But you know, through some experience, making my own noodles is more fun and has proven to be delicious and quick. Noodles is my go-to dish to make when I'm pressed for time, tired or 'very happy' from a night out.

Toss turmeric, paprika, cayenne pepper, cili padi, soy sauce and arak (Chinese rice wine) into the prawns and stir.

If you are a little extra like me, toss in some tofu for protein. If you don't have another source of protein, don't sweat it. Just make up the good stuff another day.

In goes the noodles. (Boil noodles prior to this to about 95% doneness)
Give it a good stir. Be quick about it because it may stick to the bottom of the pot.

Add in some more scallions and off the heat now.

This is the Fire Noodles on a good day. On some days, it may not be Instagram-worthy but it sure will still taste good.
List of Ingredients:
Air Fried Noodles - 2
Prawns - 3-4 pcs
Turmeric - 1/2 tsp (just eyeball it, the prawns should be coated golden yellow)
Paprika & Cayenne Pepper - 1 tsp each
Bird's Eye Chilli - 2-3 pcs
Soy sauce - 1 tbsp
Cooking Wine (Chinese Rice Wine) - 1 tbsp
Vege/Tofu/Anchovies - Optional
