ABC should be a Majestic Mess

My family loves ABC so much their eyes light up when someone asks, "Oi chap suit mou?" (Anyone up for some shaved ice?).

As each gets up from the table to attend to The Bizniz, I slink into the background hoping no one would ask me. I don't have the heart to say, "I pass" because they love it so much.

In recent weeks, we have taken a shine to red rice and since it's Lent season, I'll be cooking more plant-based dishes.

Recipe for 2 big eaters

Spicy beans

Spicy DRUNK French Beans

Ingredients:

French Beans - 1 to 11/2 packs

Vegetarian Oyster Sauce - 3 soup spoon full (or the amount of a full soy sauce container)

Soy Sauce - 1 tbsp

Chinese Rice Wine - 2 dashes

Bird Eye Chilli - 4 (depending on tolerance)

Steps:

  • Blanch the damn beans

  • Heat a dollop of oil in pan. When heat rises, add bird eye chillies

  • Add oyster sauce, soy sauce, rice wine and water

  • Add diluted corn starch to thicken sauce

  • Finally add beans and give it a quick stir. Finito!

Egg Bhurji

Egg 'The Body' Bhurji

Ingredients:

Egg - 4

Green Chillies - 2 (depending on tolerance)

Curry Leaf - 3-4 sprigs

Onion (or onion powder) - 1

Diced Tomato - 1/2

Cumin (Toasted) - 2 tiny pinches

Coriander Powder - 1/2 tsp

Steps:

  • Whisk eggs in a bowl and set aside

  • In a pan, heat oil and add cumin, followed by green chillies and curry leaves

  • When the leaves start to turn a darker shade, add tomato, coriander powder and tomato

  • After a few stirs, add in the egg and fry until it is 90% cooked. Off the fire and continue to stir in pan until it achives desired doneness

Finally, assemble and enjoy.
