May it forever go down in history that I am THE BEST logistics planner in the whole world. The process will be a pain, but pain is necessary for us to reap unimaginable benefits such as... weight loss!! We're still basking in the afterglow of a very happening NYE in Phuket and I just received news that one fellow Phuket reveller lost weight as a result of the trip. I would like step up and attribute his weight loss to my planning an 8am flight back to KL, which meant us having to get up by 5.30am for the airport after a night out til about 2.30am (could be later, but who's keeping tabs).

Here are some Phuket survival tips, from what to buy there to what to cook when you get back because trust me, even peeling onions would feel like a Herculean task.

Step 1: Look for Big C in Jung Ceylon

There are sooo many goodies to pick up in Big C.. from dried fruits, cheap Lay's crisps, seaweed, coconut oil to curry pastes. If you have limited bag space, just pick these up. They don't take up much space and will prove to be a lifesaver when you get back from an active holiday.

Step 2: Look for Nutritious Vege and Reach for the Paste

Here's a quick tom yam recipe with nutritious vegetables.

(For 2 pax)

  • Ingredients:

  • White Onion - 1

  • Sweet Peas - 10 - 12 pcs

  • Okra - 6 pcs

Steps:

  • Add a little oil into pot

  • Fry cubed white onion

  • Add paste and water and bring to boil

  • Add the rest of the ingredients. After a few seconds, turn off heat to avoid vegetables from wilting

So delicious and so easy. Your muscles will thank you.
